Most leftovers that are stored in the refrigerator should be eaten within three or four days, but it can vary. This cold food storage chart shows you how long foods can be stored in the fridge or freezer.
Why is it important? Bacteria can cause food to spoil or make you ill, and due to temperature changes and the way foods break down during cooking, bacteria can grow faster in leftovers.
Leftovers will last longer in the freezer if you don’t think you’ll eat them in time. In fact, food is safe for as long as it stays frozen at 0°F. Foods may lose some of their moisture or flavor, but they’ll retain their nutrients and won’t go bad.
When you’re ready, thaw leftovers in the refrigerator, in cold water or using the defrost setting on a microwave—refrigerator thawing takes longer, but it’s safest. After thawing, use your leftovers within three or four days or re-freeze.
Finally, cook your leftovers and thawed frozen foods to 165°F (check with a food thermometer) to prevent bacteria growth.
